Tropical Grilled Chicken Breast with Papaya

Make 4 servings

Ingredients

4 boneless, skinless chicken breasts, without added salt or brine

¼ cup olive oil

1 teaspoon cumin seed

1 teaspoon cilantro seed

1 teaspoon chili powder

1 medium papaya

2 limes

Directions

  1. Prepare the grill
  2. Take a small pan and add the chicken, olive oil and spices and mix them thoroughly until the oil and spices cover the chicken
  3. Peel the papaya, cut the skin and seeds off and cut the papaya into 2-inch cubes. Pour some lime juice on the papaya and make sure that the papaya is even distributed among the four skewers
  4. Cut the limes in half.
  5. Place the chicken on the grill along with the papaya skewers and cut lime.
  6. Turn the chicken over multiple times for 3 minutes until about 12 minutes. Take the papaya skewers and turn multiple times. After about five minutes take the lime and squeeze the cooked limes onto the papaya skewers. Continue cooking for another five minutes until all sides are light brown.
